A few weeks ago I had an epic fail. So bad infact that I refused to take a photo, purely because I know I would be laughed at. I had run out of baking paper.. and though a great substitute would be butchers paper.  #epicfail! Obviously this was NOT the thing to do when cooking with hot sticky toffee like substance for my Honey Rice Crackles – this #epicfail was posted about on facebook and twitter and people giggled at me.

I was in contact with shortly afterwards. They have been working with Julie Goodwin and Rebecca Perry on a Back to School Lunches campaign, to help bring a little fun into everyone’s lunchbox.

Children love variety, and for me, even though I give my daughter a peanut butter sandwich every day (she refuses to try any other condiment). I always serve it to her slightly differently! Keeps the excitement of having the same lunch every day new!

 sent me a giftbox (which you will be able to win aswell further below!) to trial their products and try out some of the lunches Julie and Rebecca have created.

The challenge was set, and as always my children enjoyed the fun lunches we made!

Lego Lunch:
Ingredients:
Lego Sandwich:
2 slices of bread cut into rectangles (crusts removed)
1 slice of bread cut into 6x 1cm circles
Filling of choice (we choose peanut butter as normal)

Trail Mix: Raisins, Rice Crackers, Popcorn, Pretzels, Yoghurt covered Nuts.
Silicone Food Separator

Instructions:
Spread your filling of choice onto one of the rectangles and place the second on top. Using a little filling – glue the circles on top in two rows to form the Lego press studs.

Place sandwich in lunchbox and use the Silicone Food Separator to keep the Trail mix separate.

This is my daughter’s Lego lunchbox, which I bought on Ebay from the UK.

That afternoon we made my favourite New Zealand treat. This time using Glad Baking Sheets! They were a saviour to my Honey Rice Bubble Squares (and no butchers paper in sight!)

Honey Rice Bubble Squares
Ingredients:
125g butter
half a cup of sugar
2 tbsp honey
4 cups rice bubbles
Sprinkles

Instructions:
Place Baking Paper in a swiss roll tin and have a large bowl with rice bubbles in it all ready
Mix up honey and sugar and butter into a pot with a solid base and melt – simmer as if making toffee  for about 6 minutes– depending on how crunchy you like it, somewhere between soft ball and hard ball stage of toffee.
Pour honey toffee mix over rice bubbles, mix through (as fast as you can as it sets quickly), then quickly pour into greased tin and push down with another piece of baking paper until it is about an inch or so thick and firm together
Add sprinkles and leave to set.
Cut into squares to serve!
Keep these refrigerated and they last for weeks in the fridge (although in my household usually only a few days if that!)

Chinese New Year – we made Firecracker Pinwheels!

Ingredients:
2 slices of bread with crusts removed
Butter
100’s and 1000’s

Instructions:
Plave the bread slices on the workbench only slightly overlapping to form a rectangle. Using a rolling pin, roll the bread as thin as possible. This will bind the edges of the bread together slightly aswell.
Spread over a thin layer of butter and then pour on the sprinkles.
Roll the bread, starting at a narrow edge into a tight cigar shape. Wrap in Glad wrap and twist the edge to form a cylinder. Chill slightly before slicing. Serve with the cut side up to show off the colourful filling.

My son decided he wanted his and his sister’s lunch – the cheeky monkey! I gave my daughter some children’s chopsticks to use so she could practise using them and have some fun with her lunch.

Also served with their lunch was Pikelets and Cheese cut into stars and shooting stars, mini trail mix (Popcorn and Raisins)

Lastnight I used the Baking sheets to quickly pop some rissoles I had panfried in the oven to cook through. These sheets were the perfect size for my baking tray!

I also use Glad mini bags to pop a Trail Mix into my handbag for when we go out in the car, walk to the park or a shopping trip! Always handy to have a little snack with you for yourself and the children! This one is made up of Cheerios, Raisins, Mini Marshmallows and Pretzel Sticks.

    Love the next new blog changes Yvette. Your kids looked like they had a ball with that lunch. Do they really eat all that food? Congrats on finding the winning formula for lunches. Hope your shop is a great success!!

    You are such an inspiration. My daughter just started day care and I am going to have to pack amazingly interesting lunches for her so that she eats instead of being distracted by all the fun going on. Getting lunch ready each morning while juggling a 6 month old is interesting to say the least so I think this pack would make my life so much easier. Let’s see how I go …

    I absolutely love lunches like this, although, we arent allowed to take peanut butter to school anymore due to other kids possibly having allergies so no peanut butter, nuts or nutella allowed….

    Hearing that you had an epic fail makes me feel so much better! I am not good in a kitchen. Indi gets what she gets for lunch. I wouldn’t be able to win this comp so I’ll just enjoy reading other people’s ideas lol x

    Congrats, the site looks great! Thanks for all the inspiring lunches you create. I sometimes adopt some of your ideas with my own kids lunches but mostly I just wonder how you find the time to do it all. With three kids I find filling lunchboxes a very time consuming job even without doing fancy things. I imagine it is much easier to create all these wonderful things when you are using the right tools huh?

    The Firecracker Pinwheels are on my list to try with my daughter – a very cute and clever idea that looks pretty simple. I’m sure I can manage that one!

      Thank you! My children aren’t at school yet – but my lunches do not take more than 5 minutes. I make sure I have a trail mix made up for the week ahead aswell as lots of baked goodies to pop in aswell – from muffins to scrolls etc – as for the vegetables when I use carrot for morning snack I use the other half for lunch.

    Great lunch ideas!!! Can’t wait to try them out!!! My little princess is such a fan of animals at the moment – her favourite being ducks and fishes!!! I would love to make sandwiches in those shapes for her – especially since she is such a fussy eater!!!!!
