Happy Halloween!! We made a special monster sandwich for my daughter’s lunch today! Ghost and ghoulies are out tonight, although we don’t celebrate Halloween by going out and Trick or Treating.. we do like to get into the spirit through making a special bento lunch.

On the menu:
Monster Sandwich (Vegemite with cheese and salami with grape eyes)
Grape and Strawberry monster
Pikelet monster
Tuna Sushi Monsters

Served in the EZ Bento Lunchbox with Halloween Hat from Disneyland as decoration.

After a month away on the other side of the world it really is great to get back to making Bento lunches for my children! Although Jetlag seems to have taken its toll on the children and I .. and so we’re suffering a little bit with wide awake nights and sleepy days.

On the menu:
Leftover Chicken Schnitzel
Rice
Strawberries
Watermelon
Wheat Crackers
Hard Boiled Egg (using the Thomas the Tank Engine Egg Mold)

Today guestposting for me while I am in Europe is Sharon from The Homemade Mum – now Sharon has been teaching me alot about choosing the healthier options rather than going for the easy ones! She is also one of my bestfriends and made my Wedding dress for me last March!!

Dairy Free and Gluten Free Zucchini Slice
If you didn’t tell anyone that this was dairy free they would never know. The nutritional yeast flakes give it a cheesy flavour and they are also really good for you! This is fantastic straight from the oven or cold for a snack. A great lunchbox item for school.

Dairy Free and Gluten Free Zucchini Slice

Ingredients: 
1 onion finely diced
4 rashers bacon finely diced
5 eggs
1 cup SR gluten free flour (if you only have plain then add the required amount of baking powder)
3 tbsp. nutritional yeast flakes (these are available from health food stores)
2 cups of grated zucchini
1/3 cup oil (I use grape seed oil so it is also nut free for school)

Instructions:
Gently fry the bacon and onion until soft. Put to one side to cool slightly.
In a large bowl add eggs and whisk lightly. Then mix in oil, yeast flakes, flour and zucchini. Add the precooked bacon and onion and mix well.
Pour into a well-greased pan (30cm by 20 cm) and cook on 175 degrees (fan forced) until firm to the touch and brown on the top (approx. 30 mins) this differs depending on your oven.
This is great fresh or can be cut into portion sizes and frozen. Ours never lasts long enough to be frozen!

This is Rebecca Wolfe from Bentos on the Bayou.  I am super excited and honored to be a guest blogger today at Little Bento Blog.  I love the lunches and recipes Yvette shares each week, and hope you enjoy the bento I am sharing with you today.

When Yvette told me that she and her family were headed to Euro Disney, I was so excited for her.  After all, Disney is the “happiest place on earth!”  It’s certainly one of my favorite places!  I must admit that I’m a little envious.  I mean, a week with Mickey…WOW!!!  A week to enjoy the magic!  Again, I am so excited for her.

To celebrate her fun vacation, I am sharing with you one of my favorite bento lunches that I have ever made.  My Mickey and Minnie Mouse are made with white rice cooked in water with a small amount of pureed carrots.  I’ve added a few Hidden Mickeys and tons of raw fruits and veggies, making this a fun, colorful and nutritious lunch!!  Actually, it is 2 lunches – one for each of my children (Mickey for my son and Minnie for my daughter).

Mickey Mouse – Hand Shaped Rice w/ Nori, Provolone & Black Olive Accents
Minnie Mouse – same as Mickey, but add Bell Pepper & Provolone Bow
Lettuce, Grape Tomatoes, Carrot Sticks, Raw Broccoli
Yellow & Purple Cauliflower, Black Olives
Provolone Mickeys, Clementine & Kumquat Mickey
Blueberries, Strawberry
