My Banana and Choc Chip Muffins with a little twist of chocolate milk was a big hit with my daughter, who helped bake them with me and knew Banana was in there and was adiment that she would not eat them when they were baked. She ate 5 while they were still warm and wouldn’t wait to cool them down!

Banana and Choc Chip Muffins

INGREDIENTS:
50gm Margarine/Butter
2.5 cups self-raising flour
1/4 cup milk
1/4 cup chocolate milk
2 eggs
3 ripe bananas, mashed
1 cup Milk Choc Chunks

INSTRUCTIONS:
Pre-heat oven to 180 degrees.
Place wet ingredients in a food processor and whizz for 30 seconds.
Add flour and whizz until just combined.
Stir through Milk Choc Chunks
Scoop into mini muffin pans.
Bake for 12-15 minutes

Allow to cool on a rack before serving.

To freeze: Once cooled, place on a baking tray in freezer for 4 hours, then place in ziplock bag – defrost in lunchbox or microwave for 10 seconds.

Makes approx 40.

Today’s Bento lesson is how to make a fly sandwich! Getting creative in the kitchen doesn’t need to be complicated!! Just a little imagination and open that refrigerator.

As most of you know last year I served 365 Peanut Butter sandwiches to my daughter – however everyone was presented to her in a different way. In February she will be starting Kindy and I do need to get her away from the Peanut Butter Sandwiches and start introducing her to new flavours in the sandwich.

Today I decided she should try Cream Cheese, Ham and Cheese. Simple but yummy combination.

How to make a Fly Sandwich:
Spread a piece of bread with Cream Cheese.
Place two pieces of ham on top of the Cream Cheese.
Cut around the edge so it is in an oval shape.
Cut a slice of cheese in half to create two rectangles then round of one edge and slice a edge off the other end.
Cut a long thin strip of Nori paper and slice into 5 equal lengths.
Cut two circles out of Nori paper.
Cut a cherry tomato in half and place on the ham for eyes
Place Cheese slices in a wing-like pattern
Place the Nori paper as 4 legs and 1 nose.
Place the two Nori circles on top of the cherry tomatoes
