To show you how the food won’t mix with each other I stood it up – as my little man will be carrying his lunchbox to the park!

Today I am giving you my Chicken Yakitori recipe. Yakitori is made with several bite-sized pieces of chicken meat, mounted on a bamboo skewer and grilled. However I love just making it in batches, cooking it up and popping it in to the lunchbox (minus the skewers). Or keeping it in the fridge and nibbling on them as a snack. This is a great lunch hot or cold! Perfect for an alternative to sandwiches! Pop it into the lunchbox with a couple of and some fruit and vegetables and they will gobble it up!

Chicken Yakitori Recipe:
¼ cup Soy Sauce
2 tablespoons Mirin
2 tablespoons Maple Syrup
1 teaspoon crushed Garlic
2x Chicken Breasts (or thighs if you prefer) sliced thinly

Mix marinade together in a bowl.
Add Chicken Breasts and marinate for atleast 5 minutes (up to 1 hour).
Add to soaked wooden skewers and grill – however if not skewering, pop into fry pay with a little oil until golden brown and cooked.

Today’s lunch is all about pinwheels.. Quick, Simple and most importantly.. eye-appealing to my daughter! I find these great for lunchboxes and little tea parties.

We used fresh bread out of the oven to make the Pinwheel Sandwiches (I cut extra long slices), cut the crusts off and popped them in a , spread the bread with peanut butter and rolled them up. For the ham and carrots, I rolled the carrots up with the ham then used a little peanut butter to hold them in place on the end.

On the menu:
Peanut Butter Pinwheel Sandwiches
Ham and Carrots Rollups
Cheese Battons
Pretzel Sticks
2x Marshmellows

Served up in the Bear Lunchbox.
