My little man turned two on Sunday. I can not believe how fast time has flown with him! He is still a baby in my eyes!! The fact that he only started walking two months ago may accumulate to the fact that I considering him a baby still!!

Three days before his birthday I was still deciding what to do with for a birthday cake. We were only having a small family gathering (Nanna, Nanna, Great Nanna, Great Nanna’s Mothers day celebration too – yes 4 Nanna’s in this family!)

I wanted to do something simple. In my eyes a round cake that looked like a puppy was my idea. Until I showed my husband. And then he decided that a Fire Engine was what we needed to do! Bright Red Fire Engine Cake.

Hmmm.

Sunday morning we trekked to the local Yacht Club for breakfast with my side of the family, and then a nice stroll back to my parents house with all the ‘grandchildren’.

This is when Grampy (my dad) surprised the little man with his birthday present!

A rocking horse that Grampy had carved and made himself and it even has a real leather seat and leather horse reigns!

Now both my son and daughter have one each to keep forever and hand down to their children and grandchildren!!

Onto the birthday Fire Engine Cake.

My chocolate cake turn out a little flatter than expected so I made a mad dash to the shops and picked up a pre-made sponge cake. Which made the layering great because you got a slice of everything!

I made the red icing and husband constructed the cake and iced it and put the sweets on – he always says he won’t be helping but ends up doing it
(secretly I know he LOVES making birthday cakes!)

This is the first in a series of posts involving Kellogg’s Cereal. Kellogg’s are world renown for their breakfast cereal. I am about to step past the milk in a bowl for breakfast and use different cereals each week to create recipes for you to try at home with your children, breakfast, lunch, dinner and snacks!

Kellogg’s sent me a hamper of cereal last week, with a little note saying – enjoy!

Cornflakes recipes

The challenge has started. Cornflakes recipes up first!

Cornflakes Chocolate Crunch Slice
Ingredients:
200g Butter
½ cup Sugar
1½ cup Plain Flour
¼ cup Cocoa Powder
2 cups Cornflakes
Chocolate Icing
Sprinkles or Mini Chocolate Chips

Cream butter and sugar until light and fluffy.
Sift flour and cocoa powder.
Mix into butter mixture.
Fold in cornflakes.
Press mixture into a lamington tray.
Bake in preheated oven at 180c for 15-20 minutes (until set).
When cooled, ice slice with chocolate icing and sprinkles.
Set in fridge for an hour.
Slice and serve or keep in airtight container for up to a week.

This is great for afternoon tea, or a little treat to pop into the lunchbox.

Cornflakes recipes

Cornflake Crunch Slice 1

Cornflakes Popcorn Chicken
Ingredients:
3 Chicken Breasts (chopped into small bitesize pieces)
2 cups Cornflakes
1 tblsp Paprika
1 tblsp chopped Garlic

Place chicken in a plastic bag with chopped garlic.
Mix together.
Whiz cornflakes and paprika together in a hand blender until a mixture of fine and small crumbs.
Place crumb mixture into bag with chicken and shake until coated.
Place on a oven tray in a single layer.
Pop into a pre-heated oven at 180c for 12 minutes.

Great to eat with home made fries for a “made at home” takeaway. Or just on its own in a bowl with some dip, while watching your favourite tv show.

Ensure your little helper is wearing their apron!

Cornflakes Banana Snack
Ingredients:
1 banana
½ cup Cornflakes (slightly crush with your hand)
Peanut Butter

Peel banana.
Slice into four pieces (easier to handle)
Spread peanut butter onto banana.
Roll in cornflakes.
Slice into smaller bite size pieces.
Eat immediately.

I made this alot when introducing peanut butter to my son – he was able to feel, squish and taste, knowing he can already eat banana and cornflakes, if he was allergic we would know straight away. Yes it is a little messy, best to use a banana that has been in the fridge. You can also crush the cornflakes up into a fine crumb. This is a great snack for your little ones especially using food picks, to explore with the different textures – crunchy and soft.

fairy pinwheels

There is definitely something special about Fairy Pinwheels. The memories of fairybread when I was young – a special treat, a birthday party. It was my favourite party food, along with cocktail sausages and tomato sauce!!

With my son turning two this Sunday, we are still deciding on cake, cookies and savoury food to serve!

On the menu:
Fairy Pinwheels
Apple
Mini Marshmellows
Spicey Broadbeans

Using triangle cake silicone cups and served in the Cat Bento Lunchbox.

This is a recipe for those who wish to have French Toast but use leftover crusts (bonus), Cinnamon Sugar Bread is definitely a winner in our household for a snack – especially on movie night!

Part two of Little Bento Blog’s “What to do with Leftover Crusts” series. You can see part one , where I made Eggy Bears (Eggs in a Basket)

Cinnamon Sugar Bread

Instructions:
Crusts from leftover bread (defrosted)
½ cup butter – melted (margarine and nuttelex work well too)
2 table spoons sugar and cinnamon mix (to your liking)

Pre-heat oven at 160 degrees (fan forced)
Place bread crusts in a bowl
Pour melted butter on top and coat bread crusts
Sprinkle on 1 tablespoon of sugar/cinnamon mix and coat bread crusts
Sprinkle on 2nd tablespoon of sugar/cinnamon mix and coat again
Place onto baking tray with baking paper
Bake in oven for 10 minutes before turning them over and baking for a further 5 minutes – until golden brown and crisp.

Eat immediately (or keep in a container for up to a day – may go a little soggy in a plastic bag!)

Cinnamon Sugar Bread never lasts long in our household and are great to dip into a mixture of melted chocolate and cream (for indulgence) or Greek yoghurt.
Or just munch on their own, while you write your blog post!
