Who can make fried rice in under 10 minutes? Everyone!

This is my quick 10 minute meal and it is what myself and the little ones ate for dinner (otherwise I would have added fresh chillies and spring onions!)

Simple Fried Rice Recipe
3 Eggs (whisked)
1 cup cooked rice (I used leftovers from last night)
Frozen Peas & Corn (defrosted in warm water)
Meat (I used leftover silverside – you can use ham, chicken, bacon pieces etc)
1 teaspoon Soy Sauce
Butter (for frying)

Instructions
Melt butter in hot frypan, add whisked eggs, allow to cook to almost done in an omelete style before ‘scrambling’. Add rice and warm through, add peas, corn and meat – stirfry for 3 minutes minutes to ensure rice and meat is hot. Add soy sauce and cook for further 1 minute.

Serve immediately in a big bowl with chopsticks!

Rice balls are quick, easy and don’t need to be just rice!

I tend to hear alot of “I don’t have time.” well I can tell you YES YOU DO have time and I am going to show you how!!

It does not take long, it just requires you to have a plate, food and a smile!

My lunches I make never take me more than 5 minutes to put together – that includes choosing what they will eat and plating.

Yesterday I used Jasmine rice in the rice cooker – washed,  1 cup rice, 1 ½ cups water – Turn on rice cooker – Done (even washed some dishes while it was cooking.. but shh don’t tell my husband!)

Tuna, Sweetcorn and Mayognaise Rice Balls
1 small can Tuna
1 tablespoon Sweetcorn (I used canned Sweetcorn)
Dollop of Mayonnaise
1 cup Rice (cooled)

Mix all together and shape into a ball. Use a rice mold (or just a plain cookie cutter will do the trick too) to shape it into something special!

This mixture is great to have as a snack hot or cold aswell. Use leftovers for a fried rice, rice balls, rice salad, stuff tomatoes.. the possiblities are endless!

On the Lunch Menu:
Tuna, Sweetcorn and Mayo Teddy Riceball (I use a bear shaped Rice Mold)
Cheese (I used a star cutter)
Watermelon (I used a flower cutter)
Ritz Crackers
Raisins and Apricot Ball

Yesterday I had the most fun day in the kitchen, slow cooker was bubbling away with my BBQ Pulled Chicken .. I though I would bake aswell, in the end, my idea of baking was a massive epic fail.

I attempted choc/caramel slice – fail – the chocolate seized before it had even melted properly. Next time I will use the microwave (and chocolate melts instead of chocolate chips!)

I then attempted chocolate cake with caramel chips (oh they are so yummy just on their own!) – I though – hey what about muffins much easier for the little ones.. so I made 6 muffins before smashing glass bowl on floor.

I thought ok since the kitchen is a mess I may as well attempt to make the 100 biscuits recipe – with no flour or butter.

Muffins came out of the oven – they looked fantastic!

They did not taste good – I think I put too much cocoa powder in – because they tasted a little on the burnt side.

But atleast dinner worked!!

On the dinner menu:
BBQ Pulled Chicken
Rice (using Bunny Rice Mold – with Peas, Corn and Red Pepper)
Green Salad (using a silicone cup – Spinach, Peas, Corn, Red Pepper, Carrots, Cheese)

Served in the Cat Bento Lunchbox.

Batch cooking Pasta Salad? How? One thing I like doing at the beginning of the week – especially if we are busy or not feeling well is making up big batches of food so I know we don’t have to cook as much.

This week I have not been feeling well, so I cut up a watermelon and made a big batch of Pasta Salad – which I know I can add various different meats to it for the little ones lunches.

Cook Pasta until almost ready, then pop in Peas, Corn and Carrots, finish cooking. I then run this under cold water to cool down quickly – it also helps stop the pasta getting sticky. I put these in containers in the fridge and use as needed throughout the next few days.

On the lunch menu:
Pasta Salad with Sausage – Macaroni, Peas, Corn, Carrot, leftover Sausage, Cheese (using a fish cutter) with mayognaise.
Yoghurt with Sprinkles and Watermelon Flower
Pretzel Sticks
Raisins
Peanuts
