One thing I love most about popping out on the weekend is getting fresh bread, thats still warm, from the bakery or market stall.
Yesterday we got a fresh loaf of bread, and the lil squirts gobbled it up like there was no tomorrow!
We had it with sandwiches, cheese on toast and I may have bought some pate to go on mine!

On the menu:
Peanut Butter Sandwiches, Cheese and Ham (Cut out with a cookie cutter), Cupcake, Christmas Pretzels, Yoghurt covered Raisins.

When time just gets away from you (and this week it went so fast!) throwing together a quick, but healthy, nutritious and easy lunch is sometimes difficult when the creative juices aren’t flowing from being that slightly sleep deprived thanks to teething 18 month old keeping you up most of the night..

So I throw together bits and bobs from the cupboard and fridge, which I know MissC will eat, and then nibble out throughout the early afternoon. We call them Lunchables.

On the menu:
BBQ Chicken strips, Celery, French Onion Dip (in a silicon cup), Ritz Biscuits, half a Muesli Bar, dairy bites Cheese and Yoghurt with Sprinkles.

You know when you read a blog post.. and you think.. oh thats so good!! And then suddenly the thought of doing what the said blog post did enters into every thought you have about desserts (ok I admit thought about it for breakfast too!) Well thanks to Kim-Marie of Kimbra Likes, I have had that such thought for over a week now after she posted about making a Classic Trifle.

Now there is one Trifle I crave alot.. you can buy it at Tescos in the UK. Its a Triple Chocolate Trifle, and from memory it is Chocolate Cake, Chocolate Mousse, Chocolate Custard, Chocolate Bits and lots of cream on top with Chocolate Shavings.. I am yet to perfect it, but it was my hangover cure on a Sunday along with a bacon and egg butty or my special Scrambly Mess to which people came over on a Sunday morning to eat it because it was so good and cured the hangover!!

Back to the Trifle.. one thing I have found very useful (especially when company arrives unannounced) is whipping up cakes in such a short time! The Kambrook Cake Pop machine has come in handy… alot over the last few weeks – it takes 5 minutes to make the batter and 5 minutes to cook the cakepops!! And that got me thinking… thats right..

Cakepop Trifle!!!

I made single served trifles, but would look great in a big round glass bowl aswell.

Ingredients:
Vanilla Cake pops – 2 per glass.
Rasberry Jelly (or if making for kids perhaps Lime Jelly!)
Thick Custard
Whipped Cream or Cream in a Can (I used Cream in a Can as we had it in the fridge and the kids think its funny to watch)
Sprinkles or Grated Chocolate (I used Christmas Sprinkles)

Instructions:
Assemble in order of ingredients.

Eat in an appropriate manner – unless your like me and the first bit dribbled down my top – thanks hubby for the photo.

It was such a glorious warm day that we had a little picnic lunch outside!! Considering at the weekend we had rain and hail!! It was a nice change to be outside for lunch! We decided to make “Mummy’s Trail Mix”, a great mix of snack food to take on the go or to take outside for a picnic!

For lunch:
Peanut Butter Sandwich (with our Jigsaw Cutter) and “Mummy’s” Trail Mix: Airpopped Popcorn, Pretzels, Nutragrain, Organic Puffs and Bellamy’s Organic Apple Snacks.

For afternoon tea:
Jaxx Biscuits, Celery and French Onion Dip, served in a Kiddies Concept Snack Lunchbox.
